This coffee comes from the Betania farm owned by Linarco Rodríguez Ospina and his family. The farm is located in the Huila region of Colombia, in the Palestina region, where the coffee trees grow at around 1,800 metres above sea level. This area is known for its ideal conditions for growing fine coffee, so it is no wonder that Betania produces such great quality coffee. The combination of traditional knowledge and modern approaches results in an exceptional cup that reflects the character of the place and the handwriting of the farmers. The coffee is processed using the anaerobic fermentation method, which means that the cherries were hand-picked, then fermented for 72 to 90 hours, and then sun-dried on raised beds. This process gives the coffee a wonderful complexity, full of floral and fruity notes that develop in the cup. The result is a coffee that is elegant, with a pleasant sweetness and full-bodied enough to captivate you with its subtle but distinctive flavour.
