The flavor profile blends banana, papaya, and red grapes, creating a distinctly fruity and almost juice-like profile with a beautiful texture. It’s a coffee that feels lively and playful while maintaining the clarity typical of washed processing.
This coffee comes from the Huila region of Colombia, specifically from the Los Nogales farm and its Púlpito lot. At an altitude of around 1,900 meters above sea level, the coffee cherries here have ideal conditions for slow ripening, which gives them greater sweetness and complexity. It is precisely this combination of altitude and meticulous work on the farm that earns this coffee an SCA score of 88+. Los Nogales is among the producers who push the boundaries of processing and aren’t afraid to experiment to get the most out of every lot.
The Typica variety is a classic known for its clarity and elegance, but here it takes on a whole new dimension thanks to an innovative processing method. The process begins with “thermal fusion,” where the cherries are briefly immersed in water at 90°C, which alters the fruit’s structure and prepares it for fermentation. This is followed by dry hulling, which preserves as much juice as possible, and then a seven-day fermentation in the beans’ own sugars. Finally, the remaining juice is pressed again, further shaping the resulting flavor profile. The result is a washed coffee with pronounced fruitiness, complexity, and—thanks to the experimental processing—a truly unique character.
