This coffee comes from the Tolima region, at an altitude of 1 , 900 meters above sea level, where farming families cultivate the Caturra and Castillo varieties. Tolima is an area with ideal terroir for coffee cultivation—the combination of volcanic soil, high altitude, and significant day and night temperature differences allows the coffee cherries to ripen slowly and evenly. The result is beans with concentrated sweetness, bright acidity, and distinctive aromatics, which provide an excellent basis for unconventional processing experiments.
This selection is exceptional mainly thanks to the barrel-aged processing method, in which the coffee beans are stored in wooden bourbon barrels after drying. Over the course of several weeks, they absorb the subtle tones of the distillate and the character of the wood, which are then reflected in the cup. This process does not mask the original flavor of the coffee, but rather enriches it with new layers – vanilla smoothness, the sweetness of cola tones, and a light hint of caramelized fruit. The result is a coffee that combines the world of select beans and artisanal barrel aging into an original and unforgettable form.
