The first sip is reminiscent of jasmine tea, which slowly transforms into fresh pomegranate. Bergamot then adds a slightly citrusy elegance that brightens the coffee and leaves a long, floral finish. Alex Rayo comes from a family that is synonymous with quality and integrity inthe Cauca region of Colombia. He is the son of the well-known farmer Aristóbulo Rayo, whose coffee we have already had the opportunity to taste and who taught his son a humble, patient approach to the land. Today, Alex combines his father's experience with his own precision and new techniques, making his name a household name among farmers in the Piendamó region. He is a member of the Arte y Pasión Cafetera association, which brings farmers together, educates them, and helps improve the quality of specialty coffee.
The cherries are picked by hand when fully ripe and undergo 12-14 hours of oxidation, which enhances the aroma. They are then hulled and fermented for 35 hours in open tanks, washed twice with water, and dried for 10-15 days in parabolic solar dryers. Alex monitors every detail with the precision he learned from his father. The result is an exceptionally pure coffee with a delicate floral aroma and natural sweetness that brings out the elegance of the Gesha variety. Every cup reflects the calm, care, and pride with which this coffee was created.
