Burundi Nemba Intenso coffee comes from the hilly region of Kayanza, specifically from the Nemba processing station, located at an altitude of 1,700 meters above sea level. This coffee is supplied by more than 1,000 small farmers, each of whom grows an average of only about 150 coffee trees, often directly in their gardens. They grow the Red Bourbon variety, which is traditional in Burundi and known for its sweetness and delicacy. Harvesting is done by hand, usually by family members themselves. The emphasis on hand-picking and careful selection ensures that only the highest quality red cherries are processed. The Kayanza region is known not only for its rich volcanic soil, but also for its ideal climate – the combination of altitude, cooler nights, and sunny days gives this coffee its unique character.
The processing of this coffee is unique and carefully controlled. Within a maximum of 6 hours of harvesting, the coffee cherries are transported to the Nemba station, where their transformation begins. The cherries are first sorted by hand and the skin is removed using a pulper. This is followed by a key step – controlled fermentation using specially bred LALCAFÉ INTENSO™ yeast, which lasts approximately 96 hours. This modern fermentation method allows the maximum aroma and flavor to be extracted from the coffee beans, ensuring the purity and stability of the final profile. Fermentation is followed by thorough washing, drying on raised drying tables, and final hand sorting. The result is a coffee with a perfectly balanced flavor, proving how a precise approach can transform good beans into an absolute taste experience.
