THE BARN was given the exclusive opportunity to take care of one hectare of the Daterra farm in Brazil – and the result is absolutely fantastic. These Aramosa beans were naturally processed using a multi-stage drying process. The cherries first ripen on raised beds, where they are slowly dried in the sun, before moving on to a controlled mechanical drying phase. This precisely adjusts the moisture and sugar content of the beans. The result is a clear, complex flavor with a silky body and perfectly balanced sweetness.
