Colombia El Bombo from Illegal Beans is an espresso that focuses on clarity and calm elegance. Expect milk chocolate, Pink Lady apples, and apricot jam in your cup—sweet, juicy, yet smooth. The name El Bombo belongs to a women's farming group from the Huila region, one of Colombia's most prominent coffee-growing areas. The project was created so that women, who have long been involved in most of the work on the farms, would have a greater say in decision-making, the price of their coffee, and access to education. The coffee comes from smaller farms at higher altitudes of around 1,350–1,800 m above sea level, where the beans ripen more slowly and acquire a more balanced structure. Harvesting is done by hand, with an emphasis on the ripeness of the cherries and basic sorting already on the farm.
The processing is washed, and the goal is not an impressive process character, but stability and a clean profile. Fermentation and drying are controlled, without prolongation or experimental interventions, to bring out the origin and natural sweetness. El Bombo is certified organic, so the farms work without synthetic fertilizers and pesticides, with respect for the soil and long-term sustainability. The variety is a traditional local mix of Bourbon, Catimor, Catuai, and Caturra, which together produce a reliable espresso: it works thanks to a combination of good origin and masterful processing, without the need for any extra "tricks."
