Subtext Coffee Roasters is a specialty micro-roastery and café located in the industrial district of Toronto, Canada. Their main goal is to constantly push the boundaries of coffee quality, with the utmost emphasis on its origin, flavor, and complete transparency. They specialize exclusively in single-origin coffees that authentically reflect the seasonality and specific microclimate of the farms from which they come.
The roastery was founded in early 2020 by Alex Castellani (who is also a co-founder of the well-known Toronto establishment Boxcar Social) together with a team of experienced coffee professionals. Although they initially had to operate solely as a closed production facility due to the onset of the pandemic, this period gave them time to fine-tune their processes to perfection. Today, the Subtext team consists of enthusiasts who view coffee not only as a beverage but, above all, as the result of hard work and a commitment to biodiversity. They therefore place great emphasis on building responsible and ethical relationships with importers and farmers.
The roastery’s mission is to offer an alternative to the anonymization and commodification that dominate the mainstream coffee market. Subtext therefore never blends, rebrands, or dark-roasts its coffees, so as not to obscure their true essence. They approach the roasting process itself with a highly scientific and analytical mindset. They use moisture analyzers, colorimeters, refractometers, and sensitive thermocouples. The coffee is roasted so that the beans achieve maximum sweetness, complexity, and balance, allowing the pure character of the variety to shine through in the cup without any unwanted “roasted” notes.
Although the Subtext Coffee team isn’t primarily focused on collecting commercial accolades, the roastery has very quickly earned tremendous recognition on both the North American and global specialty coffee scenes. Prestigious industry publications, such as Barista Magazine, regularly rank it among the most exceptional coffee concepts in Canada. The roastery’s greatest reward is the respect of the community; its beans are sought after worldwide by professionals and enthusiastic home baristas alike thanks to their uncompromising quality, which the roasters themselves maintain through regular blind tastings alongside the world’s most renowned roasteries.
