Behind the project is barista Edison Shehu, who founded Nostos in London in 2021. The brand built its first strong foothold in Battersea, where it continues to rely on the trust of local customers and on seasonal coffees selected and roasted by the founding team. Another key location is St. James’s Park, where Nostos is developing its own experiential bar focused on various brewing methods and a more distinctive approach to coffee service. It is precisely this combination of a neighborhood spot and a more ambitious bar that aptly captures where the project has gradually evolved.

Nostos’ philosophy is rooted in a return to the basics, but that doesn’t mean simplicity without creativity. They view coffee as a craft in which the selection of cherries, the processing method, the roasting, and the brewing itself all matter. Their selection ranges from coffees for everyday flat whites to lots intended for top-tier manual brewing, and their roasting is designed to highlight the character and purity of each coffee. They roast regularly twice a week—on Mondays and Thursdays—to ensure they provide customers with fresh coffee on a consistent and well-controlled schedule.

Nostos Coffee does not publicly tout specific competition awards, but it has garnered attention for its unique approach to coffee service and its more experimental beverages. The British daily The Times included it among the London establishments that are elevating the premium coffee experience, singling it out specifically for its work with freeze-distilled flat whites and more distinctive specialty coffees. Their recognition, therefore, is not based on medals, but on their ability to transform a cup of coffee into a sophisticated, thoughtfully crafted experience.
