The flavour profile full of dried figs, caramel fondant with a touch of cardamom is sure to put you in a festive mood and liven up your coffee routine.

This coffee is sourced from Sirinya Farm, located in the mountainous Chiang Rai region of northern Thailand. Led by its founders Oil and Goh Chaosuwanwilai, Sirinya Farm (named after the founders' daughter) focuses primarily on growing rare coffee varieties such as Bourbon, Caturra and Catimor. These are the varieties that typically offer sweetness, balance and smooth body in a cup, and the ideal altitude, mild tropical climate gives the coffee cherries from this region their complex flavor profile. the Chaosuwanwilai themselves focus on sustainable agriculture and working with local communities. Their approach includes organic growing methods, careful bean selection and innovative processing methods such as anaerobic fermentation.

Anaerobic Honey is a specific hybrid coffee processing method that combines the honey process and anaerobic fermentation. After harvesting, the coffee cherries are dried in the sun with their pulp. The sugars contained in the pulp then penetrate the beans and give the coffee its iconic sweetness. The coffee prepared in this way is then put into closed fermentation vessels without oxygen. In the resulting cup, you will then enjoy sweet fruit notes with a slight spicy aftertaste thanks to this method - simply a coffee made for an exceptional and unusual coffee experience.
