If you haven't tried "honey" processed coffee from Rwanda yet, get ready for a real dose of elegance and sweetness. Shyira Honey from Good Life Coffee is a cup that will enchant you with its silky texture, delicate acidity, and fruity explosion. You'll find notes of red stone fruit, more specifically cherries, fresh citrus, and a delicate marzipan finish. This coffee is proof that sweetness does not have to mean heaviness – on the contrary, it stands out for its lightness and incredible drinkability. You will enjoy this coffee most as an espresso, where its layered flavor profile comes through perfectly.
It comes from the Shyira washing station, located in the Nyabihu district at an altitude of 1,850–2,300 meters above sea level, making it one of the highest stations in Rwanda. The beans are grown by around 1,800 small farmers who take the utmost care of their coffee trees. The washing station is operated by Muraho Coffee Trading, a company that specializes in specialty coffee and develops new regions with potential for unique flavor profiles.
This coffee has undergone honey processing, which means that a thin layer of sticky, sugar-laden pulp remains on the beans during drying. The result is a cup with a silky body, honey sweetness, and beautiful fruitiness that balances the subtle acidity. The Bourbon variety grown here gives the coffee depth and complexity, while the variable mountain conditions help develop delicate floral notes.
