The coffee comes from the Nyamasheke region of Rwanda, renowned for its ideal climate for growing coffee. The Red Bourbon variety, which forms the basis of this coffee, is known for its potential to produce rich and flavorful cups. Historically, smaller beans labeled "Gito" (meaning "small") were automatically sent to the commodity market regardless of quality. However, with this coffee, they decided to break down these stereotypes by evaluating the beans based on their density, not just their size. The result is a coffee that impresses with its liveliness and complexity, offering producers the opportunity to receive fair compensation for their work.
Petit Bois undergoes a precise washing process, in which the cherries are first carefully sorted by hand and then floated in water to remove unripe or damaged fruit. After the pulp is removed, fermentation takes place in concrete tanks for 12 hours. Subsequent sorting by density takes place in special serpentine channels. After thorough rinsing and final sorting by hand, the beans are dried very slowly, for up to 30 days. This careful and complex method has transformed a once overlooked coffee into an extraordinary specialty that is definitely worth tasting.
