This exceptional coffee is the brainchild of Peruvian producer Marly Palomino, who farms her farm in the Inkawasi region of La Convención in Cusco, Peru. Her farm is located at an altitude of 1850 metres, which provides ideal conditions for growing coffee. Marly is dedicated to sustainable agriculture and her farm is known for its biodiversity, where guava, citrus and erytrina grow, creating a vibrant and ecologically balanced botanical landscape. Marly also follows the Inca principle of "ayni", which means mutual aid and sharing of labor, which strengthens community ties and the sustainability of her farm.
The coffee was processed using an anaerobic fermentation method, where whole cherries were fermented in plastic bags for 48 hours, after which the skins were removed and fermentation continued for another two days. Subsequently, the coffee was dried on raised beds under UV protection for approximately two weeks. This meticulous and innovative processing process contributes to a unique flavour profile that combines sweetness, fruitiness and a subtle acidity, making this coffee a real gem amongst fine coffees.
