From the Yellow Bourbon variety , harvested in November 2024, this coffee was processed using the washedmethod. The man behind this coffee is Norbil Perez, a passionate farmer and co-founder of the Aromas del Valle cooperative. On his four-hectare La Chirimoya farm at 2,250 metres above sea level, he tirelessly experiments, educates himself and improves the coffee growing and processing processes. Norbil regularly attends workshops and training sessions to get the best out of his harvest and push the boundaries of quality. His work is an example of how the combination of a traditional approach and modern training can produce truly exceptional results.
The coffee undergoes a meticulous washing process: the hand-picked ripe cherries are first selected in floating channels, followed by a double fermentation - the first fermentation lasts 50 hours before the pulp is removed and the second fermentation continues for a further 42 hours. After fermentation, the grains are thoroughly washed and dried on raised African beds for 17 to 18 days. This meticulous process delivers a complex, clean and harmonious flavour profile that makes Peru Norbil Perez a true experience.
