If you're looking for a filter coffee that will dazzle you with its juiciness and subtle elegance, Luis Fernando Nieto's Colombia from Diamond's Roastery is just the ticket. This delicacy from Colombia is processed using the honey method and offers notes of red orange, grapefruit, nectarine and subtle lemongrass in the cup . This is a hand and carefully harvested Pink Bourbon from the June 2024 season and is perfect for everyday enjoyment.

Behind this coffee is the passion and daily hard work of farmer Luisa Fernanda Nieto, who grows her coffee at an altitude of 1,820 metres in the Colombian mountains. The farm is a place of constant learning and refinement of the craft, and you can feel it in every cup of this intoxicating Pink Bourbon. Luisa also works with the local community of farmers to work together to improve the quality of production and promote sustainable farming practices. Luisa's philosophy is built on a deep respect for nature and traditional processing methods, complemented by modern knowledge of fermentation and drying.

The processing process begins with a short fermentation of whole cherries in vats for 36 hours, which helps develop their natural flavours. The coffee is then processed using the honey method, where some of the pulp remains on the bean, promoting the resulting sweetness and complexity. During the final sun-drying process, which lasts up to 20 days, the coffee's flavour profile is further deepened. The result is a cup full of harmony, with a wonderful texture and a fresh citrus sparkle that is sure to win you over.

  • Altitude: 1820 m above sea level.
