The processing process begins with a short fermentation of whole cherries in vats for 36 hours, which helps develop their natural flavours. The coffee is then processed using the honey method, where some of the pulp remains on the bean, promoting the resulting sweetness and complexity. During the final sun-drying process, which lasts up to 20 days, the coffee's flavour profile is further deepened. The result is a cup full of harmony, with a wonderful texture and a fresh citrus sparkle that is sure to win you over.
