Efrain Carhuallocllo Salvador owns a four-hectare farm in the village of El Corazon, located in South American Peru. Efrain is recognized as one of the most innovative coffee producers in Peru, managing its farm and wet mill with exceptional precision and care. In the first ever Cup of Excellence (CoE) competition in Peru, Efrain was awarded second place, although many believe its coffee was the best in the competition. Over the years, he has won many local and national competitions, making him one of the most awarded coffee producers in the country. Chirinos, the area in which the farm is located, is renowned for its high quality coffee. It has a well-developed infrastructure, including roads linking it to surrounding towns, and a bustling town that serves as a key hub for the coffee trade. While traditional trading structures, including middlemen and Fair Trade Organic (FTO) certification, still prevail in the region, there is a growing interest in choice coffee. However, independent producers who are not part of cooperatives often struggle to access better markets and the resources needed to improve their farms. Many villages in the area have excellent coffee growing conditions, with altitudes exceeding 1 700 m above sea level, and several farmers continue to grow pure Arabica varieties. With targeted investments and improvements, these producers could break out of low market prices, which often do not cover production costs, and gain access to specialised markets that offer higher premiums for quality.
In the washed method, the cherries first go through a peeling process that removes both the skin and the flesh. The remaining green kernels with the remaining flesh are then fermented for several hours to make it easier to separate the remaining flesh. After fermentation, the grains are washed with water to remove any residual sugar. The coffee is then dried in the sun on concrete surfaces or raised beds. In some cases, mechanical dryers are used if outdoor conditions are not suitable. The resulting coffee processed by this method has a cleaner taste, higher acidity and strong fruity notes.
