The coffee comes from the Volcán Barú region of Panama , specifically from the Ninety Plus project , which is world-renowned for its innovations in fermentation and environmentally friendly cultivation. The farms are located at an altitude of 1,600–1,700 meters above sea level and benefit from rich volcanic soil, rainforests, and a stable microclimate. The coffee trees grow in the shade of native trees, and careful harvesting of ripe cherries ensures that only the best make it into the lot. The producers' goal is not only top-notch flavor, but also long-term sustainability and a positive impact on the communities in the region.

This coffee has undergone a sophisticated anaerobic fermentation process with controlled heat shock, known as thermolic. After being hand-picked, the Caturra cherries were stored in sealed tanks without access to oxygen, where controlled fermentation took place. Special temperature cycles during fermentation stimulate the development of complex flavors, increase sweetness, and ensure an exceptionally smooth cup texture. The result is a coffee that stands out for its purity, harmony, and unmistakable character.

Preparation method: V60 Coffee (g): 20 Water (g): 330 Water temperature: 95 Grinder (setting): Commandante C40 MK4 (23)
Process: Hario Switch, Origami filter, 75 ml bloom (35 s bloom) + 75 ml > release 1:45 > block > +180 ml > release 2:45 Note: Next time, I would add even more water and shorten the steeping time; the flavor was quite strong.
