Panama FINCA IRMA from Sorellina Coffee is a naturally processed Geisha that fully embodies the character of Panama’s specialty coffees. Behind this coffee is Gabriel de Dianous and his family farm, Finca Irma, located in the Volcancito region near Boquete. The story of the de Dianous family dates back to 1914, when they established their first coffee farm in Panama. Finca Irma itself was founded in 1980 on the site of former pastures and was named after Gabriel’s wife. They didn’t begin growing the Geisha variety here until 2012, and to this day they devote extraordinary care to it. Each coffee cherry is harvested by hand, and a special harvesting team is dedicated to the Geisha on the farm to ensure that only fully ripe fruits are processed.
This lot underwent natural processing, in which the coffee cherries are dried whole, including the pulp. Together with the volcanic soil and an elevation of around 1,500 meters, this processing method creates the conditions for the development of rich aromas and a fruity character. Every step, from harvest to drying, is carried out with an emphasis on preserving the quality and typical characteristics of this variety. Finca Irma is an excellent choice for anyone who wants to taste Panamanian Geisha in its traditional form, without experimental fermentations.
