The last harvest of the season from farmer Luis Balladares, roasted in Sweden by Gringo Nordic Roasters, brings a delicate yet freshly fruity cup that can be enjoyed both as an espresso and a filter coffee. These washed Bourbon beans from the Un Regalo de Dios farm (meaning "God's gift") are simply amazing! The flavor has notes of citrus fruit and apples, complemented by a subtle sweetness reminiscent of cane sugar, candy, vanilla, and lightly roasted nuts. It's the perfect coffee for moments of relaxation—elegant, balanced, and straightforward.

Behind this coffee is Luis Alberto Balladares, a renowned producer from the Nueva Segovia region of Nicaragua. His farm, Un Regalo de Dios, is located in the Dipilto-Jalapa mountains, an area with a cloud forest microclimate. Thanks to cooler temperatures (10–16 °C), abundant rainfall and sandy soil with high humus content, the coffee ripens slowly – and this is what gives rise to complex and clean flavor profiles. Luis is known not only for his precision in processing, but also for his innovative practices on the farm. For example, he plants guava trees among the coffee trees to provide shade, improve soil quality and promote biodiversity. The result is coffee with a distinctive terroir – lively, complex and full of character.

After being hand-picked, each cherry undergoes careful sorting at his Las Segovias processing station – first according to ripeness, then using water channels. The coffee is then hulled and fermented for up to 36 hours. The beans are then thoroughly washed and dried on raised beds, both in the sun and in the shade, to preserve as much sweetness and delicacy as possible.
