The beans come from the Veracruz region of Mexico, from the Pocitos farm, run by Carlos Cadena. Carlos represents the fifth generation of coffee producers in his family and continues the work of his father, who began gradually shifting the farm from commodity coffee toward quality, new varieties, and better farming practices.The farm’shistory dates back to around 1950, when Carlos’s grandfather acquired it. Today, the farm produces coffees with a floral, sweet, and balanced profile, influenced by the farm’s location in a ravine, rich soil, regular rainfall, and the diverse trees in the surrounding area.
This Mundo Maya lot was processed using the honey method. The cherries were harvested at a sugar content of 26 °Brix—a ripeness level corresponding to approximately 26 grams of sugar dissolved in 100 grams of juice—and then underwent floating and sorting. This was followed by a 16-hour rest period, hulling, and a 48-hour anaerobic fermentation, which helped develop the coffee’s sweetness, complexity, and aromatic character. The coffee was then transferred to the drying area and dried for 8 days on African beds. The result is a sweet, fragrant, and complex filter coffee that you’ll never tire of.
