Kenya INOI NDIMI from the Danish roaster Sensei Coffee, located in the heart of Copenhagen, is a coffee with delicate floral notes and fresh citrus accents, especially with a hint of lemon. Its taste is subtly acidic and very clean, giving the coffee a truly refreshing character. This profile is balanced, delicately fruity, and excellent for filter brewing, where all its nuances unfold beautifully.
The coffee comes from the Kirinyaga region of Kenya, grown at an altitude of 1,650–1,800 meters above sea level, which is ideal for growing specialty coffee. This region is known for its volcanic soil and cool climate, which contributes to slower growth and the development of complex and balanced flavor profiles. The Inoi Farmers Cooperative Society, which produces this coffee, brings together local farmers and focuses on improving the quality and sustainability of its cultivation. The cooperative plays a key role in creating a stable market and ensuring better living conditions for farmers.
Various coffee varieties are grown in the Kirinyaga region, including SL 28, SL34, Batian, and Ruiru 11, which are known for their disease resistance and excellent flavor characteristics. These varieties are well adapted to the challenging climatic conditions of the region, producing coffee with a balanced combination of sweetness and acidity. The coffee is processed using the washed method, which guarantees a clean and complex profile with intense flavors. After harvesting, the cherries are carefully sorted and fermented, which preserves the clarity of flavor and full body.
