The coffee comes from the Nyeri County area and is processed at the Ichamara Factory, which is part of the New Gikaru Farmers Cooperative Society. This station processes coffee from small farmers who farm on the slopes of Mount Kenya at an altitude of over 1,700 meters above sea level and grow the traditional SL28 and SL34 varieties, as well as the newer Ruiru 11. All farmers supply only hand-picked cherries that have undergone a rigorous selection process. The combination of high altitude, fertile red soil, and a cooler climate produces lots with exceptional depth and delicate floral aromatics.
Processing is done using the classic washed method, which is common in Kenya but still unique in its precision. After harvesting, the cherries are sorted by hand, pulped, and left to ferment for 12-24 hours in concrete tanks. This is followed by washing in clean spring water and careful sorting by density. The beans are dried on raised African beds, where they are regularly turned for up to two weeks. The result is a bright and lively cup with precise clarity and a long, sweet finish.
