The Finca Santa Elisa Pachup farm is located on the western slopes of the Acatenango and Fuego volcanoes in the Acatenango region of Chimaltenango, Guatemala. The soil rich in volcanic material, the proximity of the Fuego volcano, and the altitude between 1,200 and 1,700 meters above sea level give this coffee its unique character. The farm has recently been revitalized and its yields have increased significantly after periods of lower production. Processing is carried out by Los Volcanes Coffee through Beneficio La Esperanza, where thorough washing is ensured, especially due to the volcanic ash that must be thoroughly removed.
The beans are of the Marsellesa and Sarchimor varieties, which have been processed using the washed method. This results in a clean cup profile with clear fruitiness and very low levels of undesirable impurities. Light roasting complements this character so that the delicate tones are not "clouded." Fjord states that with this processing method, the cups achieve remarkable transparency, where the influence of origin, variety, and processing can be observed.
