The coffee comes from the Atitlán region of Guatemala, where it grows at an elevation of 1,480 to 1,800 meters. In this part of Guatemala, the high altitude, cooler climate, and volcanic soil naturally combine to create conditions that give the coffee its distinctiveness and clarity. The lot consists of Caturra and Obata varieties. Caturra is prized for its sweetness and clarity in the cup, while Obata adds structure and a more robust character to the profile. The coffee was processed using the natural (dry) method. With this method, the coffee cherries are not immediately stripped of their pulp after harvest but are dried whole.
