This lot comes from the Guji region, specifically from the Shakissofarm, and its flavor profile is full of floral notes, sweet citrus, and delicate vanilla. The coffee is processed using the CO2 decaffeinated method, which ensures that the coffee remains intense and aromatic even after the caffeine has been removed, which is exceptional for decafs, which often have a weaker flavor. Behind this exceptional coffee is Haile Gebre, a farmer who came to the Guji region with his family in 2001. Here he inherited a piece of land on which he established his first coffee farm and processing station, where more than 320 neighboring growers now supply their cherries. Haile's story is one of determination and courage. When he was 10 years old, feudal lords took away the land on which his family grew coffee, which disappointed him so much that he decided to go into politics to help change conditions for farmers in his country. After years in the army and at university, he joined the Ministry of Land Reform and later worked at the Cooperative Institute. Although he faced difficult times, including a spell in prison, he never gave up on his goal of improving conditions for coffee growers.

The Heirloom coffee from the Shakisso farm is processed using the CO2 decaffeination method, which is gentle on the flavor and preserves the maximum possible amount of aromatic components, ideal for this delicate and complex profile. The coffee beans are first carefully hand-picked, then fermented and processed using a CO2 process that effectively removes caffeine without compromising flavor.
