Ethiopia, as roasted by Jedno Kafe, is a juicy filter coffee that tastes like a stroll through a fruit orchard on a sunny afternoon. The beans come from the Guji region of Ethiopia, specifically Shakiso, where they are grown by small-scale farmers at altitudes between 1,950 and 2,210 meters above sea level.The production is managed by Dimtu Coffee Industry, which has long collaborated with farmers to help them bring their coffee to market in the best possible quality. Thanks to the high altitude, the coffee cherries ripen more slowly, accumulating more sugars, resulting in a more pronounced sweetness and a more complex flavor profile. The Heirloom varieties, along with the 74110 and 74112 variants, give the coffee the typical Ethiopian playfulness and fruitiness that is so characteristic of Guji.
Natural processing plays a major role in the final result. After being hand-picked, the cherries are dried whole, pulp and all, on African beds under the Ethiopian sun, allowing the sweetness and fruity notes to penetrate deep into the bean. This makes the coffee distinctly aromatic, juicy , and gives it a long, sweet aftertaste that lingers long after you’ve finished your cup. This process is most evident in a pour-over, yielding a clean, fruity cup that is lively and incredibly drinkable.
