Discover the lively and vibrant character of Ethiopian coffee. Ethiopia Gedeb from the Latvian roaster Rocket Bean Roastery has everything you would expect from a traditional Ethiopian heirloom. A cup of this coffee will enchant you with its smoothness and freshness, welcoming you with notes of lime, apple, and the sweetness of sugar candy. The overall impression is perfectly complemented by floral notes of jasmine. Finally, you will enjoy a delicate sweet aftertaste reminiscent of carrot cake. Each sip offers a harmonious balance between the freshness of citrus and the sweetness of fruit, which gently unfolds in a velvety smooth body.

The coffee comes from the Gedeb region, specifically from the Chelbessa washing station. The coffee cherries are grown by small farmers on local forest plantations, where each coffee tree is carefully tended and grows under natural shade. The producer is Wubit Bekele, who, together with other small growers, combines traditional methods with modern care to ensure that the beans grow to the highest quality. The high altitude and cooler climate of Gedeb allow the fruits to grow slowly, contributing to a complex and layered flavor profile.

The coffee is processed using the washed method at the Chelbessa processing station. The beans are first hulled and the pulp is removed. They are then fermented in clean water for 48 to 72 hours. They are then carefully rinsed and dried on raised African beds for 10-15 days. After drying, the coffee is passed through a dry mill, where it is de-husked and prepared for packaging. Thanks to this precise processing, the cup is characterized by bright, fresh citrus notes, a delicate floral aroma, and sweet fruit notes typical of the Gedeb region.
