The Norwegian roaster Coffea Circulor is back, and with it, this gem from Ethiopia. The coffee has undergone traditional natural processing, and the resulting cup is full of juicy tones of blueberries, mandarins, and red currants. As is customary with Coffea Circulor, this coffee has a very high SCA cupping score. In this case, it is 90 points, making it definitely worth trying.

Coffees from the Yirgacheffe region of Ethiopia are defined by delicate and floral flavors, with citrus notes and a clean tea body. Coffees from the West Arsi region were previously sold under the names Sidamo or Harrar, but thanks to a decision by the Ethiopian Commodity Exchange, this area has been recognized as a separate origin. Since then, West Arsi has gained worldwide recognition, thanks in part to its participation in prestigious competitions such as the Ethiopian Cup of Excellence. Elto Coffee, one of the importers of Ethiopian coffee, was born out of the passion of coffee experts who have dedicated their professional lives to coffee. They offer carefully selected beans with complex and fruity flavors, always with an emphasis on quality and honesty. They focus on select micro-lots with exceptional flavor profiles and advanced processing methods such as washed, natural, and honey processes. This particular coffee was processed at the Raro Nensebo washing station in the Uraga area of Guji. Approximately 35 farmers from the nearby village of Teraga, who grow their coffee trees on farms of around 7 acres, supply their cherries here.

Thenatural method is often used in areas with water shortages, especially in Africa and dry areas of Latin America, such as Brazil. In dry processing, the cherries are spread out on concrete slabs or beds and dried in the sun or using dryers. The coffee is turned regularly to prevent mold and unwanted fermentation. Once drying is complete, the husk is mechanically removed in a dry mill. Dry processing adds characteristic flavor elements to the coffee that are independent of variety or terroir. Properly executed drying brings fruity notes and a creamy body to the cup.
