This coffee comes from the Banko Gotiti farming community, located at an altitude of around 2,300 meters above sea level. It is the altitude and microclimate of the Yirgacheffe region that give the local coffees their exceptional character—slower ripening allows the beans to develop their full flavor and aroma. The Heirloom varieties, typical of this area, grow here in the shade of trees and in rich volcanic soil, which gives them a specific minerality. Dhilgee Banko Gotiti coffee has been processed using the washed method, which brings out its purity and freshness. After being hand-picked, the ripe cherries are hulled and thoroughly washed in clean spring water to remove the pulp, leaving only the coffee seeds. These are then dried on African beds for several days under careful supervision until they reach the ideal moisture content. Thanks to this careful process, the coffee retains its elegant structure, distinctive acidity, and authentic character of the Ethiopian mountains.
