This coffee comes from the Guji region in southern Ethiopia. This lot is the result of the work of farmer Ture Waji and his company , Sookoo Group. Ture founded the company with the aim of supporting local farmers and improving the quality of Ethiopian coffee. The company operates several washing stations in the Guji region, where it focuses on processing coffee using methods that respect traditional practices while ensuring high product quality. Sookoo Coffee is also involved in community projects, including building schools and improving infrastructure in the areas where it operates. Thanks to these initiatives, Sookoo Coffee has established itself as a major player in the Ethiopian specialty coffee scene. The Ethiopian Landrace variety, grown at high altitudes, ripens slowly and creates a rich base for a full flavor. The coffee was harvested during the 2024/2025 harvest season, and its character reflects not only the terroir of the Guji region but also the careful work of local farmers and processors.
The coffee owes its fruitiness and fullness to its natural processing. After harvesting, the ripe cherries are carefully sorted and then slowly dried on raised African beds or concrete slabs. During drying, the cherries gradually lose moisture and the sugars from the pulp are absorbed into the beans, creating a distinctly sweet and fruity flavor profile.
