Ethiopia Chiri, from Prague roaster Tao Coffee, is a coffee that will captivate you with its clean and elegant structure, delicate acidity, and floral-fruity character. The cup offers alternating notes of black tea, fresh lime, and delicate rose blossom, which together create a harmonious and pleasantly aromatic profile. The coffee is perfectly balanced, with a delicate body and medium acidity, ideal for all methods of filter coffee preparation, where its nuances are revealed in all their glory.
The coffee comes from the Chiri Coffee Washing Station, located in the Sidama region at altitudes between 1,900 and 2,200 meters above sea level. The station was founded in 2014 and works with more than 1,100 small farmers in the area who grow the traditional Ethiopian varieties Heirloom 74110, 74112, and 7454. To support farmers, the station provides seedlings, financial assistance, and premium payments for coffee delivered, ensuring sustainable agriculture and improving the living conditions of the local community. The area is known for its fertile soil and ideal climatic conditions for growing high-quality Ethiopian coffee, with local farmers adhering to traditional methods and maintaining the ecological balance in their coffee gardens.
Processing is carried out using the washed method, which emphasizes the purity and delicacy of the resulting cup. After harvesting, the cherries are carefully cleaned and rinsed, then hulled and fermented in controlled tanks for 12-16 hours to remove the mucilage. After a second rinse, the beans are dried on raised beds for 10–14 days, regularly turned during the day and protected from direct sunlight and the cold of the night. After drying, the coffee is stored for about 20 days before being packaged and shipped to the importer, thus preserving its purity, aromatic complexity, and medium acidity typical of Sidamo.
