This Ethiopian delicacy from the Lucky Cat Coffee roastery will transport you to the heart of Yirgacheffe, specifically to the village of Chelbesa. This lightly roasted coffee combines Kurume, Dega, and Wolisho varieties, resulting in an incredibly clean, elegant, and delicate taste experience. The cup reveals notes of elderflower, lemon cream and pear, which blend seamlessly with jasmine, honeysuckle and a hint of blueberry. Thanks to honey anaerobic fermentation, this coffee has gained sophistication – it is delicately sweet, floral, with delicate acidity and a magically clean finish. The ideal choice for those looking for lightness, harmony and a layered taste experience in their cup.

This coffee comes from the Chelbesa Danche station, operated by SNAP Specialty Coffee. The station is located in the Gedeb region, which is renowned for its high altitude (up to 2,100 meters above sea level) and fertile soil. SNAP helps more than 6,000 small farmers from surrounding villages by training them in nursery management, processing, and sustainable farming. The Kurume, Dega, and Wolisho varieties are at home in this area: they tolerate the cold conditions and altitude well, and thanks to their resilience and specific morphology, they have become the backbone of local production.

The honey anaerobic processingmethod gives the coffee purity and a distinctive aroma. First, the coffee cherries are hand-picked and sorted. They are then gently stripped of their husks and fermented under water in closed tanks for 72 hours. Finally, they are slowly dried on African beds for approximately 20 days. This precise process preserves maximum flavor while highlighting the delicacy and floral character of Ethiopian varieties.
