The first washed Ethiopian coffee of the year from Prodigal Coffee is here! Compared to their other Ethiopian coffees, this one has a fresh but still pleasant acidity. The main flavor is juicy grape jelly, followed closely by blueberries. Overall, you can expect playful and lively tones. Depending on the temperature of the coffee, you can also awaken tones of white peach, grapefruit, and white flowers.
After many years of purely naturally processed coffee, they came up with this washed gem. The coffee is grown in the Ethiopian village of Bookkisa in the Guji region . The high altitude (between 2,000 and 2,200 meters above sea level) ensures slow ripening of the coffee cherries and the development of complex flavors. After years of courses and consulting, Scott Rao and his friend Mark Bendett founded Prodigal Coffee in 2023. Scott is known for his systematic and detailed approach to roasting. His methods and techniques, including some very modern practices, are backed by years of research and practice. The beans underwent the shortest possible processing; after mechanical removal of the pulp, they were soaked in water for only 12 hours. After this short fermentation, the beans are moved to raised beds, where they are then dried. You will definitely enjoy this washed processing on a filter, prepared with a V60, AeroPress, or Chemex.
