Ethiopia Bookkisa from Friedhats roasters is an espresso for anyone who loves a purely fruity and floral cup. The taste is concentrated with notes of peach and strawberry, complemented by floral delicacy, which together create a light, fruity dessert. The sweetness, juiciness, and delicate acidity are nicely balanced, so the coffee has a distinctive but not overpowering flavor and is suitable both as a morning shot and as a sweet finish after a meal.
The coffee comes from the Bookkisa area in the Guji region of Ethiopia, where it is processed by the renowned producer Ture Waji at the Weessi station (Sookoo Coffee) at an altitude of around 2,000 meters above sea level. It is the combination of high altitude, cooler nights, and rich soil that gives this coffee its sweetness and clean, distinctive fruitiness. The cup combines the Gibirinna 74110 and Serto 74112 varieties, bred for excellent flavor and resistance to local conditions. Each lot is carefully inspected from the farmer to export to ensure that only the best coffee reaches the roaster.
The beans are processed using the dry method. Hand-picked, perfectly ripe cherries are first sorted and then dried whole on African beds at the Sookoo Coffee station. Over the course of several weeks, the cherries are turned regularly to ensure even drying and preserve the purity of the flavor profile without unwanted fermentation. Thanks to this careful natural processing, the beans concentrate maximum sweetness and fruity tones, which manifest themselves in the espresso as creamy strawberry, delicate flowers, and juicy stone fruit.
