Ethiopia Balaycho from Portuguese roaster SOLO Brewing Coffee Roasters Lisboa is a celebration of one of the world's most iconic coffee origins. This naturally processed lot from Sidamo offers a distinctive and layered flavor profile with notes of blackberries, brown sugar, caramelized orange, and subtle floral accents. The caramelized orange peel character is one of the most distinctive features of this coffee. The sweetness of brown sugar balances the fresh citrus notes, creating a juicy, elegant, and long-lasting cup with a slightly syrupy body.
The SOLO Lisboa roastery was awarded the title of Best Roastery in Portugal in 2025, received recognition for sustainability at the My Coffee Awards in Barcelona, and its creations are led by Dani Cassiano, one of the winners of the Coffee Personality of the Year 2025 award.
The coffee comes from the Sidamo region of Ethiopia, where it is grown at an altitude of 1,500–3,000 meters above sea level in fertile volcanic soil and a cool mountain climate. The producer is Mecota Trading, an organization that supports small farmers while ensuring traceability and quality processing. The lot consists of local landrace varieties that represent the natural genetic richness of Ethiopian coffee and give rise to an authentic, terroir expression.
The processing is done using the natural method, where whole coffee cherries are dried in the sun with their pulp. During drying, natural fermentation occurs, which deepens the sweetness and enhances the intense fruity character. This process gives the coffee a fuller body, distinctive fruitiness, and complex aromatics, highlighting its citrus freshness and sweet, long finish.
