El Salvador El Martillo, from the Prague roastery Candycane Coffee, presents itself in the cup with a full and harmonious profile that captivates from the very first sip. It is dominated by notes of tropical fruit, juicy cordial, and bittersweet cocoa nibs, which together create a sweet yet complex flavor. This lot is ideal for filter coffee and shows how modern processing methods can enhance the character of traditional Salvadoran varieties. With a cupping score of 87, it is a truly appealing choice for lovers of juicy and aromatic coffees.
El Martillo comes from a 19.5-hectare farm in the Ahuachapán region of El Salvador, which has been managed with care and experience by the Salaverri family for six generations. Thanks to their emphasis on quality and attention to detail in cultivation, this coffee ranks among the most interesting Salvadoran specialties. The farm is located at an altitude of 1,700 meters, where ideal conditions for coffee growth give the cherries their full flavor and sweetness.
Lot El Martillo #1 was processed using the anaerobic natural method and was created from a combination of Bourbon and Híbrido de San Francisco varieties – a unique cross between Bourbon Elite and Pacas. Hand-picked fully ripe cherries fermented for 80 hours in closed tanks and were then dried on terraces. This careful process gives the coffee depth, distinctive sweetness, and a complex character that is perfectly reflected in the cup.
