The coffee comes from the Los Pirineos farm, located on top of the Tecapa volcano in the Usulután region of El Salvador. Gilberto Baraon's farm, covering over 150 hectares at an altitude of 1,100-1,400 meters above sea level, is known for growing more than 80 different coffee varieties under the partial shade of native trees. Gilberto Baraon was a very successful farmer and, before his death, managed to achieve a number of top 10 placements in the El Salvador Cup of Excellence competition. Today, Gilbert's farm is run by his son Diego Baraon, who is continuing the tradition of producing high-quality coffee.
These beans are of the Sudan Rume variety and have been processed using the semi-washed method. This begins with the hand-picking of only ripe coffee cherries, with unripe and damaged fruits being removed before processing. The cherries are then pulped and dry fermented overnight. The following morning, the remaining pulp is washed off the fermented beans and the beans are transferred to drying beds. Drying takes place slowly on raised beds covered with shade nets, with the coffee being turned regularly throughout the day to ensure even drying. At night, the beds are covered to prevent condensation and moisture from reaching the beans. After drying, the coffee is stored in hermetically sealed GrainPro bags and then sorted and packaged in vacuum bags on the farm before shipping.
