This winter, the Jedno Kafe roastery in Liberec is offering a limited edition coffee from El Salvador that is juicy, playful, and yet very elegant. Los Angeles is built on lively fruitiness, a clear structure, and a fresh lime line that holds the whole profile together. The flavor combines wild strawberries, cane sugar, and white grapes,with a slightly sparkling lime acidity that may resemble a refreshing tonic. The body is medium, the texture clean and pleasantly juicy, and the finish long, refreshing, and playful.
The coffee comes from the Los Naranjos farm in the Los Naranjos canton near the town of Juayúa in the Sonsonate region. The farm covers an area of approximately 22 manzan and has long focused on growing high-quality varieties, including the distinctive Pacamara, known for its aroma and juiciness. The Juayúa area is perfect for these profiles, and the local conditions are reflected in the cup with lightness, fruitiness, and fresh energy. Cultivation and processing are carried out in accordance with the principles of the RENACER Field School program, which emphasizes regenerative agriculture, soil health, and long-term sustainability. Farmers regularly work with soil samples, use shade, and adjust nutrient dosages to match the actual needs of the plants.
The cherries were hand-picked and then processed using the anaerobic natural method, where fermentation takes place in a controlled environment without oxygen. This was followed by drying on beds at the San Rafael beneficio, where the stability of the process and the purity of the final profile are strictly monitored. The result is a limited lot that showcases Pacamara at its best: distinctive, juicy, sweet, and yet refreshingly balanced.
