Processing takes place as a variation on the washed method, but with an emphasis on detail and control. During fermentation, temperature waves are used—alternating between higher and lower temperatures—which slow down biochemical processes and protect the bean’s structure from damage. Thanks to this, the coffee retains its firmness, elasticity, and ability to hold onto aromatic compounds. Fermentation is followed by thorough washing and then very slow drying in a dark room for approximately 30 days, during which the coffee is regularly turned and airflow is monitored. This process helps stabilize moisture and preserve the sweetness and purity of the flavors. The result is a very clean, sweet, and complex cup that fully highlights the character of the variety.
