The flavor profile of this Ecuadorian coffee from Blind Monkey Roasters is all about harmony, smoothness, and purity. Right from the start, you’ll be enchanted by an ethereal, floral note of jasmine, accompanied on the palate by the refreshing juiciness of oranges. The entire body is beautifully balanced and underpinned by the rich, warm sweetness of chocolate, caramel, and honey. Thanks to precise processing and careful roasting, this coffee offers exceptional clarity in its individual notes, excellent balance, and a pleasant, clean finish that will delight any lover of traditional yet complex espressos.
The beans come from the Los Laureles farm, run by farmer Sebastián Jiménez in the renowned Palanda coffee region ( Zamora Chinchipe province) in southern Ecuador. Sebastián represents the third generation of his family and proudly continues the tradition of growing specialty coffee with an emphasis on top quality and environmental protection. The farm is located at a high altitude of 1,650 meters above sea level, where Typica coffee trees grow sheltered beneath the canopies of native trees. This shade-grown cultivation method helps preserve the region’s rich biodiversity and allows the coffee cherries to ripen more slowly and evenly.
The crystal-clear flavor profile is the result of a carefully controlled washed processing method. The coffee cherries are handpicked at their peak of ripeness, then de-pulped and fermented under strictly monitored conditions. After being thoroughly washed in clean water, the beans are slowly dried, which helps stabilize and maximize the coffee’s natural sweetness, clarity, and flavor balance. The combination of traditional farming knowledge and this meticulous approach results in a coffee that proudly represents the global reputation of Ecuador’s specialty coffee scene.
