The La Reserva Kanaa farm, run by David Quevedo, is located in the Zamora Chinchipe region , in the heart of southern Ecuador, surrounded by five nature reserves. This location provides ideal conditions for growing high-quality coffee, but the high humidity makes drying the cherries difficult. Therefore, the Quevedo family decided to transport the ripe cherries to Loja, where they are dried slowly and evenly in a cooler and drier environment, which helps to achieve exceptional coffee quality. The coffee is grown on a family farm with a long history, founded in the 1940s.
This coffee is processed using the natural anaerobic method , which means that the cherries are fermented in closed tanks for 96 hours directly on the farm. This method of fermentation gives the coffee deeper fruity notes and greater complexity. After fermentation, the coffee is transferred to Loja, where it is dried on raised beds, ensuring even drying and preserving the purity of the flavors. This careful process gives the coffee its unmistakable character and high-quality flavor profile.
