Behind this exceptional coffee is Pepe Jijón, a former mountaineer and adventurer who became a pioneer in the field of specialty coffee. His farm , Finca Soledad, is located in the Intag Valley in Ecuador, at an altitude of 1,515 meters above sea level, and is surrounded by rainforest. Although the farm covers 120 hectares, only 4 are used for coffee cultivation – the rest belongs to nature. Pepe grows varieties such as Gesha, Sidra, and Typica Mejorado, with Sidra forming the basis of this particular batch. In addition to being the first person from Latin America to solo climb all seven of the world's highest peaks, he is obsessed with quality and nature—which is reflected in every cup of his coffee.
SyOxy coffee is processed using an innovative method developed by Pepe and his team – they call it SyOxy, short for "Sidra + Oxygenation." First, the coffee undergoes anaerobic fermentation in open tanks, where oxygen is encouraged to promote the development of fresh, fruity notes. The cherries are then de-pulped and fermented for another 48 hours in mucilage in closed tanks. This is followed by thorough washing and slow drying for 20 days in the sun – both direct and indirect. The result is a coffee with an exceptionally clear profile, complex structure, and a smooth, juicy body.
