The coffee comes from the Loja region of Ecuador, from a farm that has only been run by enthusiastic grower Abraham Armijos since 2022. Abraham has only one hectare of land for growing coffee, but he devotes all the more care to each and every coffee cherry. In addition to coffee, he also grows fruit trees, which create a biodiverse environment that benefits not only the soil but also the taste of the coffee.
After harvesting, only ripe coffee cherries were carefully sorted and then processed using the traditional "washed" method. First, the cherries were hulled and the pulp removed, then they were stored in tanks where they fermented for 24 hours. This was followed by rinsing and soaking. Finally, the beans were dried for 17 days under a greenhouse structure to prevent direct sunlight. The result is a coffee that retains its purity, fresh fruity notes, and complex profile.
