Don Alexis Coffee is a farm with a story. Alexis Ramirez, its founder, has dedicated his entire life to agriculture. In 2015, the family built the "Los Campos" micro-mill with the aim of achieving independence, quality, and direct contact with customers. The coffee trees, which yield only a few hundred kilograms of coffee each year, were planted in the 1990s. They grow in a place where wild blueberries grow freely, and their flavor is delicately reflected in this competition lot. It represents the pinnacle of what a family farm can achieve when tradition is combined with vision. The high altitude and Red and Yellow Caturra varieties provide ideal conditions for the creation of exceptional coffee.
The unique processing method is carbonic maceration. This is the fermentation of coffee cherries in an oxygen-free environment for several days, which enhances the fruitiness and complexity. Fermentation is followed by slow drying in the sun, lasting up to 30 days. The result is a coffee with incredible depth of flavor that will appeal to anyone looking for more than just caffeine.
