Behind this exceptional lot are Rodolfo and his daughter Ariela Boillat, the third and fourth generations to carry on the family tradition with passion and precision. In 2024, this farm was discovered by 88 Graines, who immediately fell in love with their unique honey processing - and we're not surprised at all! Founded back in 1890, the Carrizal farm is located in a breathtaking landscape between the Poás and Barva volcanoes, surrounded by two crystal clear rivers. With more than 15% of the area left as natural forest, it is clear that Rodolfo and Ariela place emphasis not only on the quality of the coffee, but also on sustainability and harmony with nature. The altitude of 1,500 metres above sea level, coupled with warm days and cool nights, creates ideal conditions for the slow ripening of the coffee cherries, ensuring a deep sweetness and complex flavour profile.
The hand-picked and carefully sorted cherries are then processed on the farm using the Red Honey method, which imparts a rich and silky texture to the coffee. And how does this fascinating process work? Red Honey means that after the skin is removed, a significant amount of pulp (mucilage) remains on the beans, which darkens and concentrates the sugars as they dry on African beds and terraces. The result is a distinctive sweetness with notes of ripe fruit, beautifully balanced with a pleasant acidity.
