The story of this coffee is closely linked to the incredible tenacity of young farmer Wilmer Galindez. His 3-hectare Napoles farm is located in the Lavaderos (San Agustin) area of the Huila region, at an altitude of between 1, 800 and 1,950 meters above sea level. Wilmer literally built the farm with his own hands from the wild jungle, while paying off his family's debts in the evenings. Today, he grows 2,000 trees of the Tabi variety, which is known for its resilience and excellent cup quality. Wilmer's unwavering vision and investment in equipment make him one of the most inspiring producers in the area.
The precise flavor profile is the result of classic wet processing (washed), which Wilmer has perfected. The coffee cherries are first sorted in water and then fermented whole for 24 hours. After the beans are hulled, another 54 hours of dry fermentation takes place before the coffee is moved to raised beds, where it is slowly dried for 20 days. This demanding process ensures that the elegance of the Tabi variety, with all its tropical nuances, is fully expressed in the cup. The result is brightly clean, with a clear structure and a sweet caramel finish, ideal for those looking for the perfect balance in coffee.
