Watermelon Sugar coffee from Coffee Pirates is a refreshing take on fine coffee that combines playfulness with depth. This microlot comes from the hands of Jair Arcila, a third-generation Colombian farmer from the Quindío region, known for its rich coffee tradition. The Finca Santa Mónica farm, where this coffee is made, is located in the heart of Colombia's Quindío coffee region. Jairo Arcila grows exotic varieties such as Pink Bourbon, Java, Papayo and Gesha. The coffee trees here grow at an altitude of over 1 500 metres, which contributes to their slower maturation and more intense flavour profiles. His sons, Carlos and Felipe, co-founders of Cofinet, have been instrumental in modernising the farm and introducing advanced harvesting and processing methods. Thanks to their leadership, Finca Santa Mónica has become an example of sustainable and quality coffee farming in the region
The coffee was processed using the Honey-dry anaerobic fermentation natural method. This technique involves aerobic fermentation for 24 hours, where the beans ferment with the pulp still in place, followed by 50 hours in GrainPro bags at a temperature below 22 °C. The coffee was then dried on raised beds until it reached the ideal moisture content. This innovative process contributes to the coffee's unique flavour and aroma, which is fresh, fruity and full of character.
