Colombia Sudan Rume from the Danish roastery La Cabra is a coffee that captivates with the unmistakable aromatic profile of the Sudan Rume variety. From the very first sip, it offers delicate notes of ripe fruit, accompanied by the distinct sweetness of brown sugar and a full body. The resulting cup is rich, complex, and elegant. Thanks to the natural processing method, the coffee develops a more intense fruity character while retaining the variety’s typical characteristics.
The coffee comes from the Café Granja La Esperanza farm in Colombia’s Valle del Cauca region, where the Sudan Rume variety is grown at an elevation of 1,700 meters above sea level. This lot was harvested in November 2025. Sudan Rume, also known as RS-510, is a rare Ethiopian variety prized for its distinctive aroma and rich flavor profile. The farm devotes exceptional care to this variety, growing it on a separate 4.8-hectare plot where it has consistently yielded exceptional results over the long term.
The coffee cherries were processed using the dry method, in which, after being hand-harvested, they are first left to rest for approximately 48 hours to lose some of their moisture and ensure that fermentation proceeds as gently as possible. The whole cherries are then dried for about four weeks on raised African beds until their moisture content drops to approximately 11%. This is followed by a roughly three-month resting period in climate-controlled warehouses, during which the moisture content stabilizes and the final flavor profile develops. Carefully controlled fermentation and slow drying give this coffee a rich, fruity character, pronounced sweetness, and the typical aromatic profile of the Sudan Rume variety.
