Discover Colombia SCARLET from theNie Czaplaroastery in Gdańsk, Poland, a coffee that breaks down the boundaries between specialty coffee and sweet dessert. This isn't a gentle tap around citrus. This is an explosion. The aroma is reminiscent of vanilla pudding and sweet marshmallows, which immediately arouses curiosity and slight disbelief: can coffee taste like this? Juicy strawberries and raspberries are added to the flavor, balancing this sweet bomb.

This lot comes from the Huila region of Colombia, an area known for its experimental courage and precision. The Castillo variety grows here in the ideal conditions of the high mountain climate, where the temperature differences between day and night promote complexity and sweetness. Local farmers are pushing the boundaries of traditional production and are not afraid of innovations that make their coffee something special. Today, Huila is not just a name on the packaging, it is a symbol of a new generation of producers who want to show the world that Colombia can be wild, playful, and technologically precise at the same time.

Processing is the key to the whole show here: the honey method combined with carbonic maceration and, in addition, co-fermentation with red fruit. After partial removal of the pulp (honey), fermentation takes place in a CO₂-rich environment (carbonic maceration), which promotes intense fruitiness and a creamy texture. The added fermentation with red fruit pushes the aroma to the extreme, highlighting notes of strawberries, raspberries, and sugar sweetness without the cup losing control. The result is a velvety body, pronounced sweetness, and an incredibly long finish

Excellent as both a cold brew and a drip coffee.
Distinctive aroma and flavor
I tried both versions with milk, and experiment after experiment—it was excellent, in my opinion
I liked everything. This is exactly the kind of experimental co-ferment I was expecting.
Recipe
Brew Method: Cafec Deep Dripper
Coffee (g): 12.5g
Water (g): 25g blooming + 240g
Water Temperature: 89–92°C; higher temperatures didn’t work well for this. But try it out for yourself
Grinder (setting): Comandante C40 – 24 clicks
Process: Classic pour-over, bloom with 25g of water, let it settle for a minute, then continue pouring the remaining 240g of water over the coffee. Be careful with the coffee temperature. It must not be too hot.

Or cold brew—25g of coffee to 650ml of water, steep for 12–15 hours in the refrigerator (depending on individual preferences). Grinder: Comandante C40—coarse grind, 38 clicks

In my opinion, it’s a really nice, funky coffee that’s perfect for lifting your spirits every now and then. It probably won’t be everyone’s cup of tea, but based on the description, you can expect it to be a bit of an experiment.

You can really taste the strawberries; it doesn't seem like overkill to me (considering it's a co-ferment)
It works well as a sweet finishing touch :)
