Processing is the key to the whole show here: the honey method combined with carbonic maceration and, in addition, co-fermentation with red fruit. After partial removal of the pulp (honey), fermentation takes place in a CO₂-rich environment (carbonic maceration), which promotes intense fruitiness and a creamy texture. The added fermentation with red fruit pushes the aroma to the extreme, highlighting notes of strawberries, raspberries, and sugar sweetness without the cup losing control. The result is a velvety body, pronounced sweetness, and an incredibly long finish.
