The beans come from the Pitalito region of Colombia, located in the Huila area, which is known as one of the most important growing areas for select coffee in Colombia. It is the high altitude, rich volcanic soil and the alternation of warm days and cool nights that create the ideal conditions for the slow ripening of the cherries and the development of a complex flavor. Ombligón coffee is grown by small farmers who focus on precise hand harvesting and a sensitive approach to nature. This results in a coffee with an authentic terroir and a distinctive personality.
The Ombligón variety was processed using the natural method, i.e. drying whole cherries in the sun. After careful hand picking, the coffee cherries are spread out on African beds, where they dry for several days and ferment naturally.
